Churrasco
Churrasco refers to Brazilian barbecue. It is a dish where chunks of meat, skewered on iron spits and grilled solely with rock salt, are brought to the table by staff called "passadores." They carve the meat directly in front of the customers, offering their preferred cuts. This simple seasoning with only rock salt and the absence of oil in the grilling process make it very healthy, with excess fat from the meat melting away. Among the selection of over 10 types of meat, the most popular is "picanha," which comes from the top sirloin area of the cow. It has a perfect balance of fat and lean meat, allowing you to fully enjoy the rich flavor of the meat.

A custom-designed world-class churrasco machine
In 1994, upon launching our initial store in Japan, we encountered an issue with the churrasco machine's insufficient firepower, failing to meet our expectations. After several years, by harnessing our feedback, innovative ideas, and Japanese technological prowess, we engineered a machine that arguably ranked among the world's finest at the time. Through testing, we confirmed its capability to reach firepower levels of up to 980 degrees. With this advanced machinery, we gained precise control over the desired doneness of every meat cut, guaranteeing a crisp exterior while locking in the succulent juices, thus delivering delectable servings to our valued customers.

We prioritize using Black Angus beef for our churrasco, as it boasts a robust umami flavor and tender texture, making it perfect for simple lean meat preparations. Imported chilled, we age these meats for a minimum of 22 days to achieve optimal tenderness. Furthermore, we tailor the thickness of each meat cut and the skewering technique to match the churrasco machine's firepower. Our seasoning of choice is Mongolian rock salt, renowned for its pronounced sweetness. By adjusting the size of the salt grains, we ensure they dissolve perfectly during grilling, imparting flavor evenly throughout the meat.

This dedication is because we believe that freshly grilled meats are the most delicious. Our passadores, who serve the meats, communicate with customers to understand their pace of eating and the status of their plates, ensuring that they always have the best quality churrasco. We also carefully determine the thickness of the cuts for each type of meat to ensure that they are served in the most delicious way possible.
Salad Bar
In the center of the restaurant, we have installed a massive salad bar where you can enjoy approximately 40 different items. We provide unique Brazilian ingredients such as palm hearts and beets, as well as fresh vegetables sourced from our local contracted farms. With a variety of dressings, oils, vinegars, condiments, and more available, you can customize your salad to your liking. We invite you to experience the joy of creating your own salad.

We provide a selection of around 20 unique South American ingredients. We carefully choose seasonal vegetables grown in Japan and prepare them using suitable cooking techniques to enhance their natural flavors. Piri Piri Sauce
At Barbacoa, we offer a homemade chili sauce. It's made by combining jalapeños and chili peppers with garlic, blended into a paste. This original sauce pairs exceptionally well with our barbecue meats and is sure to become addictive after just one taste.

It's a sauce with plenty of ingredients, such as finely chopped onions and tomatoes marinated in vinegar. When served on top of barbecue meat, it adds a refreshing taste.

The iconic Brazilian cocktail, Caipirinha, has been a household favorite in Brazil for generations. In the rural parts of Brazil, sugarcane and lime trees are plentiful, with sugarcane being used in various culinary applications and often brewed into alcohol by families. Caipirinha was born as a refreshing drink for hot days, with plenty of lime juice added to it. At Barbacoa, we stay true to the Brazilian tradition by using a whole lime in our Caipirinha.
